I haven't had a vegetable garden for several years because the soil got a little too salty from the water I have to use, so I let the rainfall wash the salts out of the soil, and now that I'm getting the soil prepared, I'm really excited about being able to raise food that will be high in vitamins minerals and enzymes. Eating food right out of the garden is about the best way to eat vegetables and fruits, and those vitamins minerals are at their peak just after picking. I'm having high expectations about going out to pick tomatoes, standing over the kitchen sink to eat them because they're so juicy, and feeling like my vitamins minerals just got a huge boost from eating the deilcious fruit. Tomatoes are actually a fruit, and nothing beats a fresh tomato right out of the garden just bursting with vitamins minerals and other phytochemicals that assure good nutrition as long as the crop lasts. I'll freeze what we can't eat for excellent eating in the winter.
